Cocoa Black Bean Brownies
Ingredients:
- 1 x 15oz can of black beans (rinsed and drained)
- 1 whole egg
- 2 egg whites
- 1 tbsp ground flaxseed + 1 tbsp hot water
- 5 tbsp coconut oil
- ¼ cup maple syrup
- 3 tbsp dark cocoa powder
- 2 tbsp stevia powder
- ½ tsp sea salt
- 1 tsp pure vanilla extract
Preparation:
Preheat an oven to 175 degrees Celsius. Then, put black beans into a food processor to mash well into a paste. Before adding the other ingredients, add 1 tbsp hot water to 1 tbsp ground flaxseed in a small bowl and set aside. After about 3 minutes the flaxseed mixture should be slightly thickened. Add this and your remaining ingredients to the food processor.
Once the mixture is well incorporated without any chunks (should be smooth), scrape into a greased 8×8 pan and bake for about 30 minutes. Before removing, place a toothpick in the brownie mixture to make sure it comes out clean and they are fully cooked.
These can light brownies can be frozen and stored for snacks on the go too.
